The main ingredients of Adjika are salt, pepper and garlic and there is no tomato.

Georgia Flame peppers should be used, however I didn't have them so I substituted with a bit hotter jalapeños.
Dried peppers should be used according to original recipies. I had a lot of fresh red jalapeños and used them.

Ingredients
  • 1 kg red jalapeños, stems removed.
  • 0.5 kg garlic
  • 0.4 kg coarse salt
  • 0.5 cup coriander
  • 0.2 kg walnuts
  • 1 pack (~50g) spice mixture khmeli-suneli
  • 1 tsp ground cinnamon

Instructions
  1. Put walnuts, coriander, salt into a food processor. Process.
  2. Add jalapeños and garlic, process until smooth.
  3. Finally add cinnamon and khmeli-suneli. Process.
  4. Transfer to the jars and store in the refrigerator.
